| Abstract | Nitrites and nitrates are foot additives that can be used as a preservative. According to the requirement of the Minister of Health of Indonesia RI number 722/MENKES/IX/1988, level allowed for nitrites in processed meat is 125 μg/g, wheres for nitrates is 500 μg/g. The purpose of this study was to determine the amount of nitrites and nitrates found in sausages marketed the supermarket in Medan. The samples analyzed were five sausages products are branded and unbranded two sausages products are not sold in supermarkets (Carrefour Gatot Subroto and Brastagi the Supermarket). Identification of nitrite performed using sulfanilic acid reagents, N-(1-naphthyl) ethylenediamine dihydrokside (NED) and KI in acetic acid and chloroform. Identification of nitrate performed using Zn metal reagent, a solution sulfanilic acid and ferrous sulfate N-(1-naphthyl) ethylene diamine dihydrokside (NED) and reagents in dilute sulfate acid. Determination of nitrite and nitrate levels carried visible spectrophotometry using color reagent N-(1-naphthyl) ethylene diamine dihydrokside (NED) at maximum wavelength of 540 nm. The result measure all samples were found to contain nitrites and nitrates. Nitrites levels obtained in unbranded sausages is for sausages code A 107.44 μg/g, and code B 96.01 μg/g, wheres in branded sausages was Bernardi 57.37 μg/g, Kimbo 57.60 μg/g, Fino 75.88 μg/g, Farmhouse 87.80 μg/g, and Sozziz 51.96 μg/g. Nitrates levels obtained in unbranded sausages is for sausages code A 7.04 μg/g, and code B 17.93 μg/g, wheres in branded sausages was Bernardi 27.07 μg/g, Kimbo 47.24 μg/g, Fino 19.92 μg/g, Farmhouse 18.86 μg/g, and Sozziz 2.00 μg/g. All samples were found to meet the requirement levels. Validation test conducted on the methods used yield recovery is 106.82 % and 101.86% for nitrite and nitrate, relative standard deviation (RSD) is 0.5898 % and 0.6169% for nitrite and nitrate. It shows this method gives good accuracy and precission with a limit of detection (LOD) 1.45 μg/ml and quantity limits (LOQ) is 4.83 μg/ml. |
