Abstract	A diagnosis on hygienic-sanitary conditions in food services located at municipality of Santa Rosa, RS was performed in the present study. A checklist (verifi cation list) including fi ve fundamental requisites for hygienic food manipulation was applied on each establishment. In addition, the microbiological analyses were carried out in the environment, equipments, utensils and food manipulators. The assessment of checklist showed that 36% of items were not in compliance with the current legislation. Microbiological analysis of the air from two environments showed a high counts for molds and yeasts and mesophilic aerobics microorganisms. Equipments and utensils evaluated showed similar results, with 100% and 86% of samples resulted in mesophilic aerobics microorganisms and total coliforms counts above the standard limits established by the American Public Health Association (APHA), which indicate unsatisfactory hygienic conditions. For assessing the food manipulator, the ranges for total coliforms counting were previous established, and in the present analysis, 57.1% of samples presented values ranging from 10.001 to 100.000 cfu per hand, which were the highest range of counting observed in this study. These fi ndings indicate the ineffi ciency on the personal hygiene procedures. Thus, the food services at Santa Rosa (RS) showed the unsatisfactory hygienic-sanitary conditions, bringing at risk the persons who frequent these food establishments.
