| Abstract | The food and nutrition units (FNU) are responsible for providing nutritionally balanced meals and adequate sanitary conditions. This study aimed to evaluate the sanitary conditions of a hospital FNU during receipt, storage, processing and food supply for their sick and healthy customers. We conducted a quantitative and cross-sectional study, by applying a checklist proposed by Resolution RDC no. 275/2002. It was observed that the nonconformities encountered in block buildings and facilities accounted for approximately 57% of total 47 items evaluated. To block equipment, furniture and fixtures, the number of nonconformities was over 75%. It was found in the production and transportation of food from 32 out of 38 items (84%) presented in conformity. Regarding blocks of food handlers and documentation verified 100 % and 89% of compliances, respectively. The FNU sample showed compliance in 77% of the checklist items, being classified in group I, according to the proposal by the National Sanitary Surveillance Agency rating. It is suggested to correct the inadequacies found evaluating the possibility of building a new FNU or reform the current based on the current legislation requirements, aimed at ensuring the adequate sanitary conditions, since most non-conformities were related to buildings and facilities. |
