| Abstract | Milk is a food that has high nutritional value and therefore is of fundamental importance for the human diet, and should reach the consumer table without any decharacterization in its composition. Among the various activities to control milk quality, there is the detection of fraud in raw milk, through the evaluation of its physicochemical parameters. The objective of this study was to analyze the physicochemical characterization of in natura milk commercialized informally in the city of Aparecida / PB.In the period from September to October 2015, six samples from different sellers, named L1, L2, L3, L4, L5 and L6, were collected every 15 days, where analyzes of density (g/ ml), moisture, ash (ESD), dried dry extract (ESD), and were carried out in three replicates of the samples of each seller and, afterwards, the measurement of the temperature at the moment Collection. The results obtained were compared with Normative Instruction IN 62/2011. The humidity ranged from 67.49% to 89.45%; Ashes from 0.45% to 0.73%; Fat from 3.5% to 7.5%; The acidity from 14oD to 23oD; The pH from 5.83 to 6.93; The density from 1.022 g/ml to 1.031 g / ml; The cryoscopic index of 0.464 to 0.542, with an addition of water percentage of 0.12% to 6.74%; The EST of 10.54% to 32.50%; The ESD of 3.42% at 27.55% and the temperature of the samples at collection from 27 to 33.2 ° C. According to the results obtained, it can be concluded that the samples presented in an unsatisfactory way when compared to IN 62, indicating a possible fraud of this product. In this way, it is necessary to adopt measures of supervision by the competent authorities and a greater awareness of sellers and consumers. |
