| Abstract | The low longevity of coffee seeds has been attributed to their sensitivity to desiccation. The physical, biochemical and physiological occurring during processing and subsequent drying determine not only the potential of coffee seeds to produce seedlings, as well as potential for the storage studies that contribute to the understanding of the complex physiology of desiccation deterioration of coffee seeds during storage are of great importance, given the economic and social importance of this crop to Brazil. Thus, research is being conducted in order to investigate the physiological and healthy alterations occurred in coffee seeds during processing and drying, evaluating aspects of seed quality. Fruits of Coffea arabica L., Catuai Vermelho IAC 144 were harvested at the cherry stage and processed by dry and wet way, to obtain dried grains in their own fruits and grains whose mucilage was mechanically removed and removed by fermentation in water. The grains were subjected to three drying methods, sun, shade and mechanical dryer until they reach 35% and 12% humidity. Grains manually processed were evaluated in relation to physiological and healthy quality, immediately after treatment and after four months storage at 10 °C. It was conclude that the initial moisture content of 12% and the sun and shade drying longer maintain the coffee grain quality, mechanically husking or by fermentation. The natural process is harmful to the physiological quality of coffee grains. Storage of coffee grains with 35% initial moisture favours fungal incidence, regardless of the method of drying and processing. |
