| Abstract | The present investigation was carried out at the Experimental Farm "La Maria" of the State Technical University Quevedo, in the Laboratory of Food Science of the Faculty of Animal Science, located in the Km 71/2 track Quevedo - The Splice, in the provincia de Los Rios. The objectives were the following: 1) To evaluate the effect of the three formulations in the obtaining of the jelly from the physico-chemical characteristics and organoleptic characteristics of the resulting product; 2) Determine the best treatment in study and perform a microbiological assessment; 3) Establish the relationship benefit/cost of the treatments. We applied a bifactorial settlement 2x3, in a design of a randomized complete block with three replications. It used two varieties of mucilage of cocoa (and national ccn-51) and three formulations of sugar with pectin (35, 40, 45% + 0.5 % sugar pectin), earning a total of six interactions.
