| Abstract | A Box-Behnken design with three variables (sucrose concentration, initial pH value and soaking time) and three levels were used for studying the demineralization efficiency in fermented shrimp shells by Pediococcus sp. L1/2. First, the bacterial cells were inoculated into the media with various concentrations of sucrose and initial pH values, and fermentation took place under static conditions at 37 degrees C for 24h. Significant differences in the levels of total titratable acid were observed. This was followed by adding shrimp shells and soaking them in the fermentation media for 12, 24 and 36 h. The results showed that when the sucrose concentration was 50 g/L, and the initial pH value was 6.00, soaking for 36 h gave a demineralization efficiency of 68.38%. By solving the equation and also analyzing the response surface contour plots, optimum conditions occurred when the sucrose concentration was 50 g/L, the initial pH value was 7.00 and the soaking time was 36 h with a predicted value of demineralization of 83.03% whereas our experiment gave 83.47%. |

National Digital Library of India (NDLI) is a virtual repository of learning resources which is not just a repository with search/browse facilities but provides a host of services for the learner community. It is sponsored and mentored by Ministry of Education, Government of India, through its National Mission on Education through Information and Communication Technology (NMEICT). Filtered and federated searching is employed to facilitate focused searching so that learners can find the right resource with least effort and in minimum time. NDLI provides user group-specific services such as Examination Preparatory for School and College students and job aspirants. Services for Researchers and general learners are also provided. NDLI is designed to hold content of any language and provides interface support for 10 most widely used Indian languages. It is built to provide support for all academic levels including researchers and life-long learners, all disciplines, all popular forms of access devices and differently-abled learners. It is designed to enable people to learn and prepare from best practices from all over the world and to facilitate researchers to perform inter-linked exploration from multiple sources. It is developed, operated and maintained from Indian Institute of Technology Kharagpur.
