| Abstract | This investigation project has the goal of find the information in order to be analyzed, that will make possible the development and implementation of the Restaurant project Roll and Roll, which bases its operations on the production and commercialization of food and beverages. Roll and Roll restaurant project takes into account all the current standards stablished for the (Agencia Nacional de Regulacion, Control y Vigilancia Sanitaria ARCSA) for the manipulation of food (good practices of manufacturing) and food safety, like the strict control of temperatures for the treatment of the products starting from the purchase, reception, storage, processing and service, also, a lifespan of a product control will be included through an efficient system of storage based on simple but effective process as FIFO (First In First Out). The principal axes which will sustain roll and roll are the integral service, the sales, cost control and optimal production. Once the person involved in the development of the operations has understood the importance of each one and collective consciousness has been generated, the result will be a Company with a great projection with the Ecuadorian gastronomical means. The integrated service at the centerpiece of Roll and Roll should be understood as a process whose beginning is in the purchase of raw materials, goes through all the stages of production and ends in the after sales processes, when the customer has left the restaurant and staff said goodbye to him. This clarification is because it is often interpreted as excellent customer service, the fact of receive and serve well to a client until pay the bill, regardless of whether or not the food met their expectations of time and quality aside all other processes that ethical issues must be taken into account at every moment. The management of sales is the axes which summarizing all the strategies which can be stablished and executed, all the personal efforts have to be focused in generating sales that allow the project, grow and to convert in a brand that is recognized with in the sector. |
