| Abstract | The objective of this study was to define the time required for cold conditioning for a uniform ripening in 'Abate Fetel', 'Rocha' and „Packham's Triumph' pears. In addition, it was aimed to determine the maximum storage period with no damage to fruit quality. Three harvests were carried out at weekly intervals and each harvest was a factorial experiment (7x3), with seven maintenance periods at low temperature (0, 20, 40, 60, 80, 100 and 120 days) and three maintenance periods in simulated environment at 20 1 C (zero, three and six days). The quality attributes evaluated were pulp firmness, skin color, rate of starch degradation, loss of fresh mass, soluble solids, pH and acceptability. Conditioning by cold and was efficient in inducing uniform ripening in 'Abate Fetel' and 'Rocha' pears after 20 days of maintenance at low temperature followed by six days in a simulated environment, for fruit from the three harvest dates. For 'Packham's Triumph' pears, ripening uniformity occurred after 40 days of maintenance at low temperature followed by three days in a simulated environment, for fruit from the first harvest date (DC1) and 20 days at low temperature followed by six days of simulated environment for fruit from the second and third harvest date (DC2 and DC3). Abate Fetel pears with harvest date DC1 can be stored for up to 120 days and traded in six days time without compromising quality. However, fruits of harvest dates DC2 and DC3 can be stored for 80 days and sold within six days or stored for 100 days and commercialized within three days. Rocha and Packham's Triumph pears should be marketed, preferably within 100 days of cold storage and six days of simulated environment, especially for fruits harvested late. In Brazilian conditions, it was found that the cultivars require different cold conditioning periods to induce ripening. |
