| Abstract | The objective of this study was to verify the sex influence in the biometrical characteristics in vivo and carcass, physical-chemical and fatty acid profile of meat from Australian Merino lambs slaughtered at 12 months of age. Was evaluating the characteristics of the carcass and meat quality of lambs of different breeding types productive (wool, meat and dual purpose) produced in RS during the year, considering the season (spring, summer, autumn, winter) phase termination / slaughter. Lambs of Australian Merino carcasses were wider and heavier, but the females have better finish carcass when slaughtered at the same age. Sex did not affect the yield of ham and shoulder cuts, however females have higher levels of lipids, intramuscular fat, polyunsaturated fatty acids and n-6/n-3 ratio. During finishing and slaughter in the months of spring and summer, regardless of fitness zootechnical production of lambs, it is possible for finishing lambs with similar carcass weights. Animals show aptitude double carcass characteristics as subcutaneous fat thickness (SFT), rib eye area (REA), rib eye width (LOL), and depth of rib eye (POL) to lambs with similar fitness carniolian in almost all seasons. Wool lambs have greater subcutaneous fat thickness (SFT), lower degrees of marbling and rib eye area (REA) in all seasons in the finishing phase and slaughter.
