| Abstract | Background: Minerals have an important role in care of body functions and is found in many types of fruit and vegetables. Potatoes are one of the many types of vegetables popular in cultivation throughout the world, because of its nutritional value and exceptional culinary versatility. Potatoes are also a potential source of nutrition. Nutrients contained in potatoes, among others, carbohydrates, vitamins A, C, Vitamin B complex (B1, B2, B6 and folate), minerals (potassium, sodium, magnesium, phosphorus, sulfur and copper) and protein. Purpose: The purpose of this study was to find out the differences in mineral content of potassium, sodium and magnesium in granola and mini potato. Methods: Quantitative testing was performed using atomic absorption spectrophotometer for potassium, sodium and magnesium at wavelength 766.5 nm, 589.0 nm, 285.2 nm respectively by using the air-acetylene flame. This method was chosen because its implementation is easy, fast, thorough and does not require preliminary separation. Results: The results showed that the levels of potassium, sodium and magnesium in granola potato were (593.2451 ± 5.2054) mg / 100 g, (8.4773 ± 0.0500) mg / 100 g, (33.7912 ± 0.1477) mg / 100 g respectively, and for potassium, sodium, magnesium in mini potato were (685.0436 ± 4.6067) mg / 100 g, (8.1509 ± 0.0402) mg / 100 g, (33.6424 ± 0.1871) mg / 100 g respectively. Conclusion: The average different test statistically for potassium, sodium and magnesium between potato granola and potato mini using the F distribution produced t for potassium was -7.1626, sodium was 2075.7481, and magnesium was 57.9049. The results can concluded that the content of potassium in mini potato higher than in granola potato. The content of sodium and magnesium in granola potato higher than in mini potato. The three investigated minerals have significant difference. |
