| Abstract | This paper presents the results of an experimental study concerning drying of mint in a partial solar heated modular polyvalent dryer which functions by forced convection. The study aims to validate previous numerical models elaborated by different searchers in one hand. On the other hand, the various experiments undertaken try to determine the aerothermal parameters influencing the drying kinetics of mint. It consists of determining the weight loss curves of mint by fixing mass of product, initial water content of product, temperature of drying, drying air flow rate and recycled air fraction. The objective is to determine the impact of these different parameters on the time of drying of a variety of mint which is the most consumed in Morocco.
