| Description | Cassava is a unique plant having several utilities, which include the manufacture of various food bio-fibers, biocomposites, and bio-polymers. Moreover, it serves as a renewable energy source for starch. This chapter aims to study the physical, morphological, and thermal properties of cassava starch (CS), cassava peel (CP), and cassava bagasse (CB) obtained from Malaysian plants along with their chemical composition. Thermal characteristic studies using thermal gravimetric analyzer (TGA) and differential scanning calorimetry (DSC) showed that cassava starch and fiber were thermally stable with a melting point of 172.87°C, 177.76°C, and 169.23°C for cassava starch, peel, and bagasse, respectively. A study on the morphological surface indicated that cassava starches were rounded and oval-shaped, bagasse polygonal-shaped, and peel exhibited both round and polygonal. The carbohydrate content in starch is found to be 86.47 g/100 g. The study shows that the cassava peel and bagasse contain high concentrations of hemicellulose content, i.e., 23.38% and 29.26%, respectively. On the other hand, both cassava by-products have more advantages than residues of other crops owing to a lower concentration of ash (3.36%) than rice straw and wheat straw. Based on their excellent properties, cassava starch and fiber are suitable to develop materials with acceptable mechanical and thermal properties for various applications such as packaging, automotive, and agro-industrial applications.
