| Description | Acetic acid bacteria (AAB) are a group of Alphaproteobacteria belonging to the family Acetobacteraceae (Kersters et al. 2006). They are frequent colonizers of tropical flowers and fruits, and food fermenters (Sievers and Swings 2005, Cleenwerck et al. 2009). The food industry is interested in them because of their ability to produce large amounts of acetic acid from ethanol during vinegar production, kombucha tea, or cocoa bean fermentation (Trček and Barja 2015, De Vuyst and Weckx 2016). They are also used for the production of specific chemicals, such as ascorbic acid and bacterial cellulose (Adachi et al. 2003, Bremus et al. 2006, Römling et al. 2015). Besides acting as fermenting agents, some members of AAB form symbiotic relationships with insects (Crotti et al. 2010, Shin et al. 2011, Chouaia et al. 2014), or cause opportunistic infections in humans (Greenberg et al. 2007, Kawai et al. 2015). Economic importance and the influence of AAB on our lives warrant a better understanding of their physiological/phenotypical properties. New sequencing technologies have made the whole genome sequencing readily available to a wider scientific community. As a result, quite a few complete AAB genomes have been analyzed in the last decade, providing an important source of information regarding their metabolic and phenotypic potential.
