Abstract	Au début de la période de prévision, les fondamentaux du marché mondial du sucre sont maussades. Des excédents quasi inégalés ont engorgé l’économie sucrière mondiale en 2006-07, une situation qui devrait se reproduire en 2007-08, puisque la production record de sucre continue de surpasser la croissance plus régulière de la consommation mondiale. Ces excédents ont occasionné une baisse brutale des prix mondiaux du sucre en 2006-07, la constitution de stocks de clôture mondiaux, une augmentation du ratio stocks/consommation, approchant les 53 %, ainsi qu’un excédent commercial. Malgré cette surabondance, les prix mondiaux du sucre ont connu une reprise fin 2007 avant de s’infléchir, traduisant l’évolution du sentiment des marchés et de la dynamique des prix.
