Abstract	La hausse des prix des graines oléagineuses, des huiles végétales et des tourteaux d’oléagineux, qui avait commencé en 2005 et s’était amplifiée en 2006, s’est poursuivie en 2007 avec la même vigueur. Durant l’année 2006, les prix de la filière oléagineux ont commencé à subir l’influence de facteurs externes : ils se sont mis à grimper malgré l’abondance de l’offre et malgré le haut niveau des stocks mondiaux, tant en termes absolus que par rapport à la consommation totale. Cette hausse des prix a eu pour origine la situation tendue du marché mondial des autres céréales fourragères : l’envolée sans précédent des prix du maïs a incité à réduire les superficies consacrées à la production d’oléagineux, faisant ainsi monter les prix des graines et des tourteaux d’oléagineux.
