Abstract	Research finds there are five basic tastes in liquid that can be recognized by human tongue. In general, the electronic tongue is an instrument that mimics human tongue to recognize the tastes in liquid. The proposed electronic tongue system includes three subsystems, i.e., chemical sensors array, analog front end, and data treatment and taste comparison subsystem. The electrolytic conductivity signal is sensed by chemical sensors array. The sensed signals are processed by analog front end and converted to digital signals. The third subsystem use principal component analysis method to classify the tastes in liquid. The proposed electronic tongue system develops a new chemical sensors array that includes five chemical sensors and success classified the tastes in liquid by principal component analysis.
