| Abstract | The city of Santos has 7 km of beach and 60 kiosks distributed along its waterfront, offering different food and beverage options, such as juice, cocktails, soda and water. This makes the consumption of cold beverages into something usual, especially during the summer. However, the quality of the water for the ice preparation must be clean, free of pathogens, while maintaining the quality of the beverage. The objective of this study was to analyze the ice consumption of 11 establishments during winter and summer seasons. Microbiological analyzes of coliforms at 35oC and thermophilic obeyed the RDC no 12 of January 02, 2001. The results revealed that winter and summer seasons showed the same failure rate for the ice quality, with 81.2% of unfit samples consumption. However, E. coli confirmation in ice samples were higher in winter with 45.4%, over the 27.2% presented over the summer. The use of industrial ice for human consumption is a common practice, especially in summer when demand is higher, but it is still possible to notice the use of homemade ice. Bad hygienic practices from food handlers, contaminated equipment, improper storage and the ice preparation with contaminated water play an important role for the microbiological contamination, and a risk of disease transmission. |
