| Abstract | Free radicals are reactive atoms or molecules that are formed by the action of agents such as X-rays, tobacco smoke, environmental pollution, these affect a wide variety of physiological functions and participate in the development of chronic degenerative human diseases such as cellular aging, which will be carried out studies to the veteraba to avoid this type of diseases. The objective of the titration work was to determine the concentration of total polyphenols and antioxidant activity in the rind of veteraba and to achieve this, the antioxidant activity of the rind of the veteraba (Beta vulgaris L.) was evaluated by the DPPH method, determining the concentration of total polyphenols present in the ethanolic extract by the Folin-Ciocalteu method. Finally we proceeded to quantify the concentration of total polyphenols by the Folin-Ciocalteu method obtaining a result of 1.36%, which percentage is close to the concentration of the pulp, and with the DPPH method, the antioxidant capacity of the shell was evaluated obtaining a concentration of 452.2 mg TE / 100 g, which is higher than the concentration found in the pulp of the same. |
