| Abstract | Abstract: Mineral stable isotopes allow for the direct assessment of mineral absorption in all population groups. The most widely used in human nutrition are calcium, magnesium, zinc and iron. These can be used to demonstrate the effects of interventions, including the use of functional foods, on mineral absorption both from an individual meal and from whole diets. Methodologies are safe, practical and well tolerated, even by small children. |
