| Abstract | In Rio Grande do Sul, since 1993 salmonelosis has been the food borne disease of major occurrence. Salmonelosis is one of the most important public health hazards in many countries. Changes in the systems of production of foods and social pressure have led to the increase of the food poisoning incidence. The aim of this work was to verify the salmonelosis foodborne outbreaks occurred in Rio Grande do Sul in 2000. 99 final reports of outbreak inquiry had been analyzed. Salmonelosis corresponded to 74.7% of the outbreaks confirmed. Most of these outbreaks (72.2%) were associated with the consumption of raw eggs. The raw material use without sanitary inspection and the incorrect manipulation of foods had consisted in the factors what contributed to the contamination of foods of Salmonella, in 73% of the outbreaks investigated. Usually, the foods had been prepared (48.6%) and consumed (55.4%) in residences. The results of the present study suggest the need of more control of these bacteria in poultry production and the adoption of good manufacturing practices. |
