| Abstract | Salmonella Enteritidis is the enteric pathogen, food-borne, most often described in the literature on the occurrence of intoxications in humans. The importance of this organism is by its worldwide distribution with significant prevalence in broiler and their public health implications. Foods are considered potential backers of salmonellosis, becoming a threat to food security and poultry market. In birds, the importance of salmonellosis due to the damage caused by high mortality, decreased egg production and weight loss due to poor feed conversion. Prevention through mentorships in farms and cutting posture is the best way to ensure a high quality end product. Surveillance and health protection are adopted by the Ministerio da Agricultura Pecuaria e Abastecimento (MAPA) and the industry to maintain a good health status. |
