| Abstract | Salmonella spp. is a Gram-Negative bacteria and an etiologic agent of salmonelosis, a foodborne diseases (FBD). It is the main bacterial agent causing gastrointestinal disease in our country. The objective of this study was to verify the analytical method VIDAS ® Easy Salmonella, for detection of Salmonella spp. in different food matrices, inside of the Public Health Laboratory Environmental and Labor of the Health SEREMI of the Metropolitan Region. Sixty samples from five food matrices were analyzed. For each matrix, 12 samples were analyzed; ten samples were artificially contaminated with a Salmonella enterica serovar Typhimurium ATCC ® 14028 strain and two were remained as uncontaminated samples (control). Following the protocol described by the manufacturer, the samples were preenriched, enriched and submitted to presumptive enzyme immunoassay detection by the VIDAS ® Easy Salmonella kit. Positive and negative samples were cultured in selective XLD agar and then confirmed by the API 20E ® kit. The acceptance criterion for the verification of the alternative method in each matrix was the positive detection of 100 % of the artificially contaminated samples. To determine the agreement between the alternative method and the culture in XLD agar, the statistical coefficient Kappa (κ) was calculated. The information obtained in all the samples (vegetables (10/10), smoke-dried meat (10/10), seafood (10/10), poultry meat (10/10) and packaged mayonnaises (10/10)), threw 100 % of agreement (κ = 1) between the alternative method and the culture in XLD agar. The results suggest that the alternative method VIDAS ® Easy Salmonella can be used like screening method in the analyzed food matrices, by the Public Health Laboratory Environmental and Labor of the Health SEREMI of the Metropolitan Region. |
