| Abstract | The objective of this work was to determine the harvest time in which the potato cultivar BRS Ana shows the best quality for frying. The experiments were conducted in spring of 2006 and autumn of 2008, in the experimental field of Embrapa Temperate Agriculture, in Pelotas/RS, Brazil. A randomized complete block design with four replications was used. The treatments consisted of six harvest times; being evaluated the sugar content and the dry matter content. In relation to reducing sugars, in spring the reducing sugar content diminished with the advance of crop developmental cycle up to the lowest level at 111 days after planting (DAP). In autumn, the content varied among harvest times, without, however, showing significant differences neither a defined pattern. Regarding the dry matter content, in spring the content ranged with harvest dates, however at significant level only at 90 DAP. It was less unstable from 111 DAP on.
