Abstract	This project seeks to demonstrate the technical, economic, financial and environmental feasibility to set up a carob processing plant in the city of San Jose, province of Pacasmayo. This initiative came in response to finding a solution to add value to the fruits of the carob produced in the regions of Piura, Lambayeque and La Libertad, especially in the fruit obtained from Canoncillo dry forest in the district of San Jose province of Pacasmayo, in the Jequetepeque valley; industrializing the process, leaving aside the handicraft production and using machines that considerably decrease emissions of CO₂; such as pots for cooking and a hub for homogenization of the solution obtained in the cooking process. Considering the importance of this product in the diet of the target resident and given the large availability with which it has to develop a sustainable trade with dry forest Canoncillo (ecommerce) where percentage of the fruits of carob is available, a key element in preparing the carob, this project began conducting a study aimed at the aforementioned provinces, guiding capture of the 20% of the unmet demand of these markets; in the technical paper presents the production process for a plant with a production capacity of 62 tons / year of carob or what is to say 35 Und / hour; in the economic and financial evaluation a total investment of USD 179 463,06 is determined, and the flow of economic and financial case for assessment were built. The study shows the technical, economic and financial feasibility of the project and present a environmental impact assessment to minimize the negative effects on the environment.
