Abstract	Within the framework of the valorization of the Algerian flora, one wase interested in the species of the family of Lamiaceae whiche one of families is the used like world source of spices and extracts whith appliance pharmacy.The plant to which our choice related is lavande species ( lavandula steochas) coming from the area of timezrit. In this context, the aim of this work is to determinate the secondary metabolic compostion and property organoléptical , chromatographie pur essential oil . The phytochemicals tested show a richness of plant bay natural substances such as tanins gallical, the Flavonoids, Coumarine, Alkaloids and glucosides .The extraction of essential oil was carry out by hydridisttilation . The property organléptical study of the essential oil of lavandula shows that is pale yellow, liquid, has a smell . In the end, the qualitative and quantitative analysis of the oil by CG/SM allowed us to identify 22 major compounds .
