| Abstract | In the present study ultrasound-assisted extraction (UAE) of total anthocyanins from pomegranate peel was optimized using Response Surface Methodology (RSM). Ethanol was used as solvent because it is renewable (obtained from sugar cane) and GRAS. The effect of solvent concentration, pH and the extraction time on the target compounds was evaluated. The ratio to solvente was 2:20 and the extraction temperature was 30 °C. The operating condition that has maximized the anthocyanins extraction required the sonicated of the peels for 30 min in a 45% (v/v) ethanol:water solution acidified at pH 0.97. The extraction yielded 3.62 mg/g dry peel of monomeric anthocianins. The results showed that with an adequate operating condition it was possible to reach good yields using a simple extraction process.
