| Abstract | The objective of this study was to quantify the C18:2 cis-9, trans-11 and C18:12 trans-10, cis-12 isomers of linoleic acid conjugated and to evaluate physico-chemical components on cheeses of the types Requeijão Marajoara and Minas Frescal. Thirty samples weighing one kilogram each of the two types, made with buffalo milk in Para State during the rainy and the less rainy seasons, were taken from factories in the municipalities of Salvaterra and Moju. Physicochemical characteristics of the cheeses were analyzed considering the rainy and the less rainy seasons aiming to evaluate the interference of the temperature and precipitation on the concentration of the main components of the cheeses. The samples after identification were frozen for further physicochemical analyses according to the normative instructions no 68. The extraction and metilation of the fat, according to methodologies described respectively by Bligh Dyer (1959) and Conte Junior (2007) and the quantification of cis-9, trans-11 and C18:12 trans-10,cis-12 of CLA by gaseous chromatographywith detection by flame ionization. The results were statistically analyzed using SAS ® and the means compared by Tukey test (p<0,05). Average results for RequeijãoMarajoara were: pH 5,15 (±0,13); acidity 0,62% (±0,08); humidity 43% (±1,64); fat 31,75% (±3,13); fat on dry extract 55,84% (±4,38); protein 34,59% (±1,68); and ashes 2,,45% (±0,47). For the Minas Frescal pH 6,26 (0,69); acidity 0,15% (±0,14); humidity 60,99% (±2,58) ; fat 25,09% (±1,68); fat on dry extract 62,95% (±4,38); protein 11,06% (±1,65); and ashes 2,09% (±0,32). The results referring to the climatic conditions on the cheeses components shows that the acidity of the RequeijãoMarajoara is higher on the rainy season than in the less rainy season. For the Minas Frescal, differences were found on protein concentration, that is lower in the rainy season when compared to the less rainy season. The two types of chesses studied did not show significant differences on the others components. The mean content of isomerscis-9, trans-11 of the fat was 127,68mg/100gwhile the CLAtrans-10, cis-12 was 27,71 mg/100gfor the RequeijãoMarajoara. For the Minas Frescal the means were 40,85 mg/100gand 9,13mg/100grespectively for CLAcis-9, trans-11 and trans-10,cis-12. The climatic conditions did not interfereddirectly on cheeses components, and the variations found on the levels of protein and titratable acidity were dependents on others factors not evaluated. The variation of macronutrients found both in relation to the chemical composition and to the amount of isomerscis-9,trans-11 and trans-10,cis-12 of CLA, is a result of a lack of padronization on cheese processing. So, its very important the establishment of criteria for processing and legal requirements, aiming to obtain standardized products, and consequent aggregation of values on cheese production in the places of this research. |
