| Abstract | General purpose of this research is to know the effect of skin concentration of red dragon fruit influence to jam characteristic. The specific purpose of this research is to know the effect of adding sugar to the characteristics of jam and to know the combination of red dragon fruit skin treatment and the addition of the best sugar in the making of jam. This experiment was conducted from August to 2017. This experiment was conducted factorially using RAL consisting of 2 treatment factors with 5 replications. 2 treatment factors tested were skin (K) consisting of 2 skin level 500 gram (K1), and 750 grams (K2). Sugar factor (G) consisting of 2 sugar level 45% (G1), and 55% (G2). The results showed that the preferred combination of K2G1 treatment by panelists was observed from higher DMRT test results on color, texture, taste, and masking variables. In addition to the preferred treatment of K2G1 also has the highest antioxidant activity. Peningakatan sugar levels affect the decline in antioxidant activity while the best red dragon fruit skin concentration is 750 grams. |
