| Abstract | The present study was aimed at documenting the hygienic status of pork marketed in Kamrup District, Assam. The microbial quality of pork marketed in rural and urban pork shops were evaluated separately and the data were compared to facilitate a better understanding of the hygienic status existing in these areas. The hygienic status of meat personnel and the common facilities available in the pork shops viz. wooden cutting board, cutting knives etc. were evaluated by enumerating the counts for the different microorganisms' viz. aerobic count, coliforms, Staphylococcus aureus, Salmonella spp., yeast and molds and Lactobacillus spp. The results indicated that the counts for almost all the organisms considered were well above the prescribed limits for clean/hygienic pork both in the rural and urban areas. |
