| Abstract | The access to safe and nutritious food in sufficient quantity is essential to sustain the life and promote good health. Unhealthy food that contain bacteria, viruses, parasites or harmful chemicals cause more than 200 diseases. Around 600 million people get sick in the world; almost 1 out of 10 inhabitants, due to the consumption of contaminated food and at least 420,000 die (OMS, 2017). The objective of this work was to determine the presence of total coliforms and Escherichia coli in lettuce sold in four markets of the city of Loja, the method used was PetrifilmTM plates which are useful to reduce the time of cultivation, they have double film system, with dehydrated medium and a top film, also with indicators impregnated on both sides, making them a ready to use medium. The research method was descriptive and cross-sectional, obtaining a universe of 600 samples and using a sample of 80 lettuces for the study. The degree of contamination of the lettuce was acceptable since only 5.0% of the samples were contaminated with values higher than 102 – 103 CFU / g in the case of total coliforms and 2.5% in the case of Escherichia coli, these reference values were taken from the Sanitary Standard of Peru, no significant relationship was found between the market and the place of production with the degree of contamination. Despite the low contamination, the presence of fecal contamination indicators suggests that the samples could have an inadequate microbiological quality, representing a source of foodborne diseases (ETAs), if the contamination is not controlled.
