| Abstract | This current work had as main objective to study two links in the premium bovine meat supply chain, in Rio Grande do Sul. Firstly, the profile of premium bovine meat consumers was described, as well as its buying habits in Porto Alegre. Consumption preferences were traced in terms of main buying places, the responsible for buying, as well as buying frequency, the preferred premium beef cuts, and the characteristics that would define, in consumers’ opinion, a premium bovine meat and an increment of the volume bought by them. The second link studied was a frigorific industry that produces premium bovine meat, aiming to discover the main bottlenecks faced, both in governmental as in market situations, and opportunities to its growth, as well as ways of minimizing the discovered bottlenecks. In matters of the bottlenecks, five were cited by the industry responsible: adding value to the whole animal carcass, hand labor, raw material, technology and marketing. It was concluded that increasing the investment in marketing, reducing directly this bottleneck, could boost other links in premium bovine meat chain, what would minimize other bottlenecks. |
