| Abstract | This paper is aimed at evaluating the physicochemical quality of fruit pulp sold in the city of Campina Grande, in Paraiba state, in light of Ministery of Agriculture's Instrucao Normativa no 1, dated January 2000, which defines the Quality and Identity Standards (PIQ's) that covers organoleptic, physical, chemical, microscopic and sanitary characteristics, establishing minimum and maximum for each fruit pulp.
