| Abstract | A total of 336 steers were fed one of seven dietary treatments: a corn-based control, 35%, 50%, or 65% inclusion of either traditional (full-fat) or de-oiled WDGS. The steers were subjected to these finishing diets for 147 days and after harvest, 15 low USDA Choice carcasses were selected within each treatment (n = 105) and strip loins were obtained. Vacuum sealed loins were aged for seven days (33°F) and 1⁄2-inch steaks we fabricated and immediately vacuum packed and stored in an ultralow-freezer (-112°F) for fatty acid determination and proximate analysis. |
