| Abstract | The aims of this study were to find out any change of bacterial number in chicken carcasses after dipped in mixed Morinda citrifolia juice and honey. Chicken carcass was cut into six portions and each portion was repeated by five times. Six portions of chicken carcass were used in this study treated as follows : P0 as untreated or a control, P1 treated with 100 ml honey, P2 treated with 100 ml noni fruit juice, P3 treated with a mixture of honey and noni fruit juice with a ratio of 1:1, P4 treated with a mixture of honey and noni fruit juice with a ratio of 1:2, P5 treated with a mixture of honey and noni fruit juice with a ratio of 2:1. For the TPC test, sample was than diluted into 10-2, 10-3, 10-4, 10-5, 10-6. Data analysis using ANOVA test, if there are significant differences then continued with Least Significant Difference test (LSD) 1%. The results showed that all treatments gave a decreasing TPC significantly compared to control. |
