| Abstract | The electrochemical initiated oxidation and therefore the electroactive behaviour of flavonoids, which belong to the polyophenolics of plant secondary metabolites, were investigated in detail. Quantum chemical calculations of possible flavonoid radicals were performed to determine the reactive sites of the molecule in water phase. The identification of the oxidation products was realised by the coupling of an electrochemical flow cell with mass spectrometry. The formed products were detected online with the mass spectrometer and the oxidation mechanisms of the flavonoids were postulated. The electrochemical initiated oxidation of 3-methylcatechol, a simple phenolic compound, was used to mimic a laccase-initiated oxidative C-N coupling reaction with n-hexylamine. Due to the combined use of the electrochemical flow cell (EC) and mass spectrometry (ESI-MS), metabolic reactions of enzymes can be comprehended and explained. The application of EC/ESI-MS represents a suitable tool to support or even replace enzymatic metabolism studies and shows the high potential of the electrochemical synthesis route. |
