| Abstract | The glycemic index of a food refers to the effect the food has on the body’s blood sugar levels. Blood sugar levels are raised after you eat foods containing carbohydrates (sugars and starches). Various carbohydrate-containing foods affect blood sugar levels differently. The glycemic index compares the rise in blood sugar level after eating a particular food to a reference food, often the sugar, glucose. (Glucose is a very basic sugar and not the same as table sugar). One of the foods that is often used as an example is white bread. It has a relatively high glycemic index of 70, when compared to glucose, which has an index of 100. |
