| Abstract | During this research, the formulation of a fungicide against the Botrytis cinerea has been developed; resveratrol has been employed with that purpose because it is a substance that plants produce in a natural way against this fungus. The differences of resveratrol efficiency when encapsulated on soybean lecithin, β-glucans or a mixture of both have been studied through in-vitro culture techniques to determine whether these compounds enhance the penetration of the product through the cell wall of the fungus. Two different techniques of drying have been carried out in order to encapsulate resveratrol, PGSS-drying (Particles from gas saturated solutions) and spray drying. The quality of the particles produced was considerably higher with spray drying. Results show that fungal growth is slightly reduced with a solution of particles containing a mixture of lecithin and β-glucans in the shell and 200μg/mL of resveratrol. Nevertheless, more researches need to be developed in order to establish the efficiency of these formulations against the fungus. |
