| Abstract | Amino acids chelate minerals are important in food industry and alimentary supplements industry due to the large bioavailability that they have once absorbed by the body than other organic and inorganic salts. With the aim of characterize and interpret minerals chelates it has been designed experimentally crystal grown of salts of glycine and mineral chelates from zinc and iron with different pH (acid, zwitterion and alkaline) and analyze the protonation state of the amino acid carboxyl groups that there are in glycine an chelated form of glycine (with iron and zinc) by Fourier transform infrared spectrometry. In the results appear that the mineral chelate with iron as cation is coupled with the carboxyl group of glycine. However, zinc is coupled with both groups of glyicine (amino and carboxyl groups). For instance, the structural characterizations of both cations with glycine are not the same. For the experiment it has been used an spectrophotometer FTIR from Agilent enterprise, Cary 630 model and a diamond glass ATR accessory. The spectral conditions are: 64 backgrounds in a range from 400 to 4000 cm-1 and from 400 to 1800 cm-1 with a 4 cm-1 resolution. |
