| Abstract | The exploitation of dairy sheep activity on an industrial scale is recent, more precisely with the introduction of the Lacaune breed in the state of Rio Grande do Sul, in 1992. Thereafter, the state of Rio Grande do Sul is producing fine cheeses and yogurts. The differential in the production of fine cheeses from sheep's milk is a high added value and the high demand of these products, specifically in hotels and restaurants for fine food. The aim of this study was to evaluate the major sheep's milk cheeses, marketed in the state of Rio Grande do Sul and verify the compliance of their labels with current legislation. We collected prices of 11 types of sheep cheese: fresh Feta; Pecorino Toscano and its three variations of maturation: 90, 180 and 270 days; four varieties of cheese Labneh (No seasoning, Adobo, pepper and Zataar, from the same brand) and two presentations of Pecorino Romano (180 g grated wedge of the same brand). All cheeses surveyed had on their labels identifying characteristics specified in the legislation. The products are presented in portions with an average weight of 100 g. Their prices range from ten to twenty reais. The Pecorino, Feta and Labneh are characterized as delicacies. |
