| Description | Due to the environmental devastation resulting from animal husbandry, careful attention must be paid to growth of this market. While markets may provide challenges to a successful government intervention on the supply side of the market, they may provide other opportunities on the demand side and in the production of alternatives to meat. Further, the ethical code of individuals, and collectively as a society, may facilitate innovations caused by changes in consumer tastes and demand. Consumers have demanded more environmentally friendly alternatives and demonstrated the willingness to pay for them. Can changes in dietary preferences through ethics be achieved? Such changes involve both education on environmental impacts and attractive alternative consumer options. Hence, ethics, economics and policy considerations all should play a part in the future of meat consumption.This chapter discusses strong sustainability of economic markets and asserts that sustainable resource allocation, as an economic model of strong sustainability, must be applied to meat consumption. It investigates the growth in, and costs of, increased meat consumption and the role markets have to play in this dynamic. To illuminate the severity of the problem, the chapter highlights the specific case of China. The chapter also discusses the environmental impact of meat and the positive relationship between income growth and meat consumption. It discusses the specific market features of the supply and demand for meat in China, and the difficulties of organising markets that will appropriately value the environmental impact of meat. The chapter argues that the markets for meat products should be rigorously included in this discussion of environmentally threatening markets and that careful attention must be paid to growth of this market.
