| Description | Cereal grains are an important source of food all over the world. Minimizing microbial contamination of grains is an important food safety issue. Currently, the use of pesticides in industrial grain production is a very common method. However, pesticides can have negative effects on human health and the environment (Los, Zuizina and Bourke 2018). There are also other conventional methods such as drying, mechanical debranning, chlorine and hypochlorite, irradiation, and ozone used for microbial inactivation in cereals. Although these methods reduce the microbial load in grains, they cause some adverse effects on the quality and technological properties of the grains. Due to some limitations of the conventional methods used for microbial inactivation in cereals, it appears that there is a great interest in new technologies. This chapter reviews the principles of action and the current/recent advances in non-thermal food processing technology for grain industries. Their current commercial status as well as the regulations pertaining to them will be discussed, including their constraints and challenges for future research.
