| Description | In many instances carcass grading, like income tax, has seen its boldest legislation enacted as a temporary wartime measure. The primary purpose of grading is to facilitate trade by describing the commercially important attributes of the carcass. Probably the greatest impetus for formal carcass grading schemes has come in support of market reporting, to foster greater competition and public price discovery. In this chapter the word grading is used as a generic term for evaluative systems and includes grading, classification, specification, and indexing of carcasses. All carcass grading systems attempt to describe the carcass in terms of the quantity and quality of salable meat it contains. The methods used have varied from country to country, time to time and genus to genus.
