Providing carbohydrates, fats and proteins is usually easier to achieve than ensuring the population has access to micronutrients in addition to macronutrients. Micronutrients vital for human health are found in many vegetables and fruit, but the absence of alignment between agriculture (or more specifically horticulture) and health in many counties, both developing and developed, means that the nutritional needs of consumers are rarely taken into account.In many parts of the world, fast food and 'street food' are becoming increasingly common - profitability and good nutrition need not be mutually exclusive. Although nutritional quality, taste and texture increasingly have been lost in the drive for higher yields, nutrition-sensitive horticultural production can increase the availability and affordability of fruit and vegetables to supply these important components of the diet.
