| Abstract | Data on the dietary fiber intake of the Chinese population are meager. The term “crude fiber” was widely used in China until the insoluble fiber content of food items was included in the Chinese Food Composition Tables in 1991 (1). Thus, the total dietary fiber intake was not available from the recent national dietary survey (2). In this chapter, the information on dietary fiber intake in the Chinese population has been obtained from two primary sources: a comprehensive ecological survey of Chinese rural countries in 1983 designed to examine the relationships among diet, lifestyle, and mortality in China (3), and the 1992 National Nutrition Survey designed to assess the dietary and nutritional status of the Chinese population (2). In the first study in 1983, the 65 survey counties are widely distributed in 24 out of 30 provinces in mainland China, which covered the most populous areas and different dietary patterns, as well as geographical variations. Foods samples representative of cereals and vegetables consumed in the counties were collected and analyzed by direct laboratory methods (4–6) to estimate contents of dietary fiber and its components. In the second study in 1992, a total of 27,000 households was surveyed. City residents and rural residents accounted for one and two thirds of the study participants, respectively. The intakes of insoluble dietary fiber from foods were calculated based on the food composition table (1).
