| Description | Thermal processes and chemicals as additives are frequently applied as conventional techniques to inactivate microorganisms for food safety. However, non-thermal processes are of great interest based on consumer demand for less processed and additive-free food products that still maintain the right sensorial and nutritional characteristics. Moreover, non-thermal technologies are preferred largely for their environmentally friendly and economic features and their ability to fulfill consumers' preferences. Since grain and grain products are at high risk of contamination with microorganisms, they are among the product groups that find widespread application for these technologies. Grain and grain products may be contaminated not only with microorganisms but also with many other hazards including insects and chemicals. All these contamination sources are problems for the food safety of grains and their products. In this chapter, the applications of major non-thermal processes including cold plasma, high pressure, irradiation, ozone, pulsed light, ultraviolet light, and electrolyzed water are discussed in terms of their effects on the safety problems of grains and grain products.
